Stuffed crabs of Nosy Be
The kitchen team accompanied by its Chef reveals with delight its artisanal recipe of the month including the idealized ingredients for this remarkable execution of crabs stuffed with Nosy Be.
Ingredients for 2 people
2 mangrove crabs
2 Carrots, 1 Lime
1 thyme branch, 3 branches of parsley and 1 Onion
5 green onion stalks (or cives)
2 Shallots, 2 garlic cloves
1 Little angel hair boot
2 tablespoons of olive #8217 oil #8217
1 pinch of salt and pepper
2 pinches of breadcrumbs
1 small glass of old Rum Dzama from Nosy Be (Optional)
Once all these ingredients come together, you can put on your apron.
Brush carefully and rinse crabs.
Cook them 15 minutes at a low boil with 2 carrots cut into chunks, parsley, thyme and onion.
Decorate and reserve flesh.
Put angel hair in a pan of boiling water, cook them and take them out. Cut them menus.
To prepare the stuffing : finely chop the cives, shallots, #8217 garlic, chilli.
Add the crab meat into pieces and cook 2 minutes.
Add angel hair, lemon juice and rum. Salt, pepper and mix well.
Preheat the oven to 240oC.
Garnish the drained and cleaned shells of the crabs with the stuffing, sprinkle with breadcrumbs and bake for about ten minutes.
